Ingredients
- 4 cod fillets (about 150-200 grams each)
- 200 grams of cherry tomatoes
- 2 tablespoons of pitted black olives
- Fresh parsley to taste
- 1 lemon
- 2 cloves of garlic
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 4 sheets of parchment or aluminum foil for the parcels
Preparation
- Preheat the oven to 180 °C.
- Prepare the cod fillets by cleaning them if necessary and drying them with paper towels.
- Take the sheets of parchment paper and lightly oil them with extra virgin olive oil.
- Place a cod fillet in the center of each sheet.
- Season each fillet with a pinch of salt, pepper, a drizzle of oil, and lemon juice.
- Add a bit of freshly chopped parsley, the peeled and slightly crushed garlic cloves, and the black olives.
- Distribute the halved cherry tomatoes among the parcels.
- Close the parcels securely so that the steam cannot escape during cooking.
- Bake the parcels on a baking sheet for about 15-20 minutes or until the fish is cooked but still succulent.
- Remove from the oven and let rest for a couple of minutes before opening the parcels (be careful of the hot steam that will escape).
