Ingredients

  • 4 cod fillets (about 150-200 grams each)
  • 200 grams of cherry tomatoes
  • 2 tablespoons of pitted black olives
  • Fresh parsley to taste
  • 1 lemon
  • 2 cloves of garlic
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • 4 sheets of parchment or aluminum foil for the parcels

Preparation

  1. Preheat the oven to 180 °C.
  2. Prepare the cod fillets by cleaning them if necessary and drying them with paper towels.
  3. Take the sheets of parchment paper and lightly oil them with extra virgin olive oil.
  4. Place a cod fillet in the center of each sheet.
  5. Season each fillet with a pinch of salt, pepper, a drizzle of oil, and lemon juice.
  6. Add a bit of freshly chopped parsley, the peeled and slightly crushed garlic cloves, and the black olives.
  7. Distribute the halved cherry tomatoes among the parcels.
  8. Close the parcels securely so that the steam cannot escape during cooking.
  9. Bake the parcels on a baking sheet for about 15-20 minutes or until the fish is cooked but still succulent.
  10. Remove from the oven and let rest for a couple of minutes before opening the parcels (be careful of the hot steam that will escape).
