Whipped Cod with Yogurt and Purple Potatoes

Here is a recipe that blends Italian cuisine with more modern elements, creating an elegant and flavorful dish like whipped cod with yogurt and purple potatoes.

Ingredients

  • 4 cod fillets (about 150-200g each)
  • 200g of purple potatoes
  • 150g of Greek or natural yogurt
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (for example, dill or parsley), finely chopped
  • Grated zest of 1 lemon
  • 2 cloves of garlic
  • Coarse salt for cooking the potatoes

Preparation

  1. Begin by peeling the purple potatoes and chopping them into cubes. Place them in a pot with plenty of salted water and bring to a boil. Cook until the potatoes are soft, about 15-20 minutes.

  2. Meanwhile, in a frying pan, heat the extra virgin olive oil over medium heat. Add the garlic cloves and let them flavor the oil without burning.

  3. Season the cod fillets with salt and pepper and place them in the pan with the oil and garlic. Cook the cod for about 3-4 minutes on each side, or until it is well browned and cooked to the right degree.

  4. Once cooked, drain the potatoes and mash them until you get a puree. Incorporate the yogurt, lemon zest, herbs, salt, and pepper to taste, and mix everything together until you obtain a homogeneous and creamy mixture.

  5. Remove the cod fillets from the pan and, with the help of a fork, flake them to obtain flakes of fish. If you prefer, you can also use them whole for a more rustic presentation.

  6. On the serving plate, arrange a base of purple potato puree, gently lay the whipped cod on top, and if you wish, garnish with a drizzle of extra virgin olive oil, freshly ground pepper, and additional herbs.
