Cod and Honey Mushroom Quiche

The cod and honey mushroom quiche sounds like a delicious dish with a distinctly rural French touch. However, I will not fail to add a pinch of Italian flavor. Here’s how you could prepare this quiche:

Ingredients

  • 1 roll of shortcrust pastry (or puff pastry if you prefer a crunchier base)
  • 300g of already soaked cod
  • 200g of fresh honey mushrooms
  • 3 eggs
  • 200ml of fresh cream
  • 1 small onion
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • 1 clove of garlic
  • Grated cheese (Parmesan or pecorino) to taste for grating

Preparation

  1. Start with the base of the quiche, roll out the shortcrust pastry on a quiche pan, prick it with a fork, and bake in a preheated oven at 180°C (350°F) for about 10 minutes, just to precook it.
  2. Meanwhile, clean the honey mushrooms by removing the earthy part of the stem and quickly rinsing them under running water. If the mushrooms are very large, you can cut them into smaller pieces.
  3. Heat the oil in a pan and add the finely chopped onion and garlic clove, sauté until it becomes translucent.
  4. Add the minced cod to the pan and cook for about 5 minutes, then add the honey mushrooms and cook for another 10 minutes. Season with salt and pepper.
  5. In a bowl, beat the eggs with the cream, add the chopped parsley, salt, and pepper to taste.
  6. Remove the garlic clove from the cod and mushroom mixture and discard.
  7. Pour the cod and mushroom mixture onto the quiche base and level it off well.
  8. Pour the beaten egg and cream mixture over the top and sprinkle with grated cheese.
  9. Bake in the oven at 180°C (350°F) for about 25-30 minutes or until the surface is golden brown and the quiche is well cooked in the center.
  10. Let it rest a few minutes before serving. The quiche can be enjoyed both hot and at room temperature.
