Cod and Cauliflower Pizzelle

Cod and cauliflower pizzelle are a tasty dish that combines the flavor of the sea with the earth. Here is how to proceed to prepare this recipe.

Ingredients

  • 300 g of soaked and cleaned cod
  • 1 medium cauliflower
  • 2 eggs
  • 50 g of grated cheese (pecorino or parmesan depending on taste)
  • Breadcrumbs as needed
  • Chopped parsley
  • Garlic (1 clove)
  • Extra virgin olive oil
  • Salt and pepper as needed
  • Oil for frying

Preparation

  1. Start by cleaning the cauliflower, divide it into florets and cook it in slightly salted water until tender, but without breaking apart.
  2. Meanwhile, boil the cod in another pot of water for about 15-20 minutes, then drain it and let it cool. Once cool, clean it by removing skin and bones and shred it with your hands or with a fork.
  3. In a bowl, combine the shredded cod, the cooked and mashed cauliflower, eggs, grated cheese, a pinch of salt, pepper, very finely chopped garlic, and parsley.
  4. Mix the mixture well and if it is too soft, add breadcrumbs until you reach the desired consistency to form flattened patties, the pizzelle.
  5. Heat plenty of oil in a pan and, once hot, fry the pizzelle until they become golden and crispy on both sides.
  6. Drain them on paper towels to remove the excess oil.
  7. Serve them hot or warm.

The dish combines the intense taste of cod with the delicacy of cauliflower. If you do not have soaked cod, you can buy the ready-to-use one or you can soak it in water for 48 hours, changing the water every 6-8 hours.
