Coconut Plumcake with Chocolate Heart

Ingredients

  • 200 g of all-purpose flour
  • 100 g of coconut flour
  • 150 g of sugar
  • 100 ml of vegetable oil
  • 50 ml of coconut milk (you can also use regular milk)
  • 3 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • 100 g of dark chocolate

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, whisk the eggs with the sugar until you have a frothy and pale mixture.
  3. Slowly add the vegetable oil continuing to whisk.
  4. Mix in the coconut milk and stir well.
  5. Gradually add the sifted flour, coconut flour, baking powder, and salt, combining all the ingredients well without forming lumps.
  6. Pour half of the batter into a previously buttered and floured plumcake mold.
  7. Cut the dark chocolate into small pieces or use chocolate chips and distribute it on top of the first layer of batter in the plumcake.
  8. Cover with the remaining batter, leveling the surface well.
  9. Bake the plumcake for about 40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the plumcake cool in its mold for a few minutes, then transfer it to a wire rack to cool completely.
