Coconut Flour Cookies

Ingredients

  • 200 g of coconut flour
  • 100 g of granulated sugar
  • 2 eggs
  • 80 g of soft butter
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • (Optional) 50 g of chocolate chips or chopped dark chocolate

Preparation

  1. In a bowl, mix the coconut flour with the sugar and pinch of salt.
  2. Add the soft butter and work the mixture with your hands or with a mixer until you get a sandy consistency.
  3. Incorporate the eggs and vanilla extract, continuing to mix until the dough becomes homogeneous.
  4. If you wish, you can add chocolate chips or chopped chocolate for a decadent touch.
  5. Prepare a baking tray by covering it with parchment paper and pre-heat the oven to 180 °C.
  6. Form small balls with the dough and place them on the tray, flattening them slightly.
  7. Bake in the oven for about 10-15 minutes or until the cookies are golden.
  8. Let the cookies cool on a wire rack before serving.
