Coconut Flour Cookies

Ingredients
- 200 g of coconut flour
- 100 g of granulated sugar
- 2 eggs
- 80 g of soft butter
- 1 teaspoon of vanilla extract
- 1 pinch of salt
- (Optional) 50 g of chocolate chips or chopped dark chocolate
Preparation
- In a bowl, mix the coconut flour with the sugar and pinch of salt.
- Add the soft butter and work the mixture with your hands or with a mixer until you get a sandy consistency.
- Incorporate the eggs and vanilla extract, continuing to mix until the dough becomes homogeneous.
- If you wish, you can add chocolate chips or chopped chocolate for a decadent touch.
- Prepare a baking tray by covering it with parchment paper and pre-heat the oven to 180 °C.
- Form small balls with the dough and place them on the tray, flattening them slightly.
- Bake in the oven for about 10-15 minutes or until the cookies are golden.
- Let the cookies cool on a wire rack before serving.
