Coconut Bundt Cake

Coconut Bundt Cake is a fragrant and tempting dessert, perfect for breakfast or snack time. Here are the ingredients and the method:

Ingredients

  • 200 g of all-purpose flour
  • 50 g of coconut flour
  • 200 g of granulated sugar
  • 100 ml of vegetable oil
  • 100 ml of coconut milk
  • 4 eggs
  • 1 packet of baking powder for sweets
  • A pinch of salt
  • Icing sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C (356 °F) and butter and flour a bundt cake pan.
  2. In a bowl, beat the eggs with the sugar until they become light and frothy.
  3. Slowly add the vegetable oil while continuing to beat.
  4. Alternately fold in the sifted flours and coconut milk, mixing gently with a spatula so as not to deflate the mixture.
  5. Add a pinch of salt and the baking powder, blending well all the ingredients.
  6. Pour the batter into the prepared pan and level the surface with a spatula.
  7. Bake the bundt cake for about 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool on a wire rack before unmolding.
  9. Once completely cool, dust with icing sugar.

For an extra Italian touch, consider adding some coconut liqueur to the recipe to intensify the flavor, or a handful of dark chocolate shavings for a tempting contrast.

Curiosity

Coconut flour contributes to giving an intense exotic note to sweets, but it is also useful for enriching nutritional value thanks to its fiber and healthy fats. In many tropical culinary cultures, coconut is a fundamental ingredient in both sweet and savory preparations.
