Coconut Cake

Here is the recipe for a delicious Coconut Cake:

Ingredients

  • 200 g of all-purpose flour
  • 200 g of sugar
  • 200 g of melted butter
  • 4 eggs
  • 200 g of grated coconut
  • 1 packet of baking powder
  • A pinch of salt
  • Icing sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a cake pan (preferably a springform pan to facilitate removal of the cake).
  2. In a bowl, whip the eggs with the sugar until they become light and fluffy.
  3. Add the melted butter (make sure it’s cool so as not to cook the eggs) and continue mixing.
  4. Gradually blend in the flour, baking powder, and pinch of salt, continuing to mix until you have a homogeneous mixture.
  5. Finally, fold the grated coconut into the batter, mixing gently until it is well distributed.
  6. Pour the mixture into the pan and level the surface with a spatula.
  7. Bake the cake for about 30-40 minutes, or until it is golden brown and a toothpick inserted in the center comes out clean.
  8. Once baked, let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  9. If desired, you can dust with icing sugar before serving for an extra touch of sweetness and decoration.
