Ingredients
- 200 g of dark chocolate
- 120 g of butter
- 200 g of sugar (better if half white and half brown)
- 3 eggs
- 100 g of flour
- 40 g of unsweetened cocoa powder
- 1 pinch of salt
- 1 teaspoon of vanilla extract
- 100 g of shredded coconut
- 50 g of coconut flour (to add more consistency and flavor)
- (optional) 30 g of shredded coconut for garnish
Preparation
- Preheat the oven to 180°C and prepare a square pan (about 20x20 cm) by lining it with parchment paper.
- Melt the dark chocolate with the butter in a double boiler. Let it cool down slightly.
- In a bowl, whisk the eggs with the sugar until the mixture is fluffy and light in color.
- Add vanilla extract, shredded coconut, and coconut flour to the egg mixture.
- Incorporate the melted chocolate and mix gently.
- In a separate bowl, combine flour, cocoa, and a pinch of salt, then sift this over the wet mixture and mix until fully incorporated, but do not overmix.
- Pour the batter into the prepared pan and level it off.
- (Optional) Sprinkle the surface with additional shredded coconut before baking to add crunch and flavor.
- Bake in the preheated oven for about 25-30 minutes or until a skewer inserted in the center comes out clean with only a few crumbs attached.
- Allow to cool completely before cutting into squares.
