Here’s a delicious recipe for coconut biscuits with a soft white chocolate heart. If you have a passion for the combination of coconut and chocolate, this recipe is for you.

Ingredients

  • 200 g of flour
  • 120 g of sugar
  • 80 g of butter, at room temperature
  • 100 g of grated coconut
  • 1 egg
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • About 100 g of white chocolate
  • A bit of milk, if necessary

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the soft butter with the sugar until you get a creamy mixture.
  3. Add the egg and continue to work the mixture.
  4. In another bowl, combine the flour with the baking powder, the pinch of salt, and the grated coconut. Mix the dry ingredients well.
  5. Add the dry ingredients to the mixture of butter, sugar, and egg, mixing until you obtain a homogeneous dough. If it is too dry, you can add a tablespoon of milk at a time, until you reach the desired consistency.
  6. Form small balls of dough and flatten them slightly to create disks.
  7. Cut the white chocolate into small pieces and place a piece in the center of each biscuit.
  8. Fold the edges of the biscuit towards the center to cover the white chocolate and shape again into a ball.
  9. Place the balls on a baking tray lined with parchment paper, leaving some space between them.
  10. Bake the biscuits for about 10-15 minutes, or until they are golden.
  11. Let the biscuits cool before serving.
