Coconut and red fruit doughnuts

Coconut and red fruit doughnuts are an excellent choice for a snack or a sweet and slightly exotic end to a meal. Here is the recipe for you:

Ingredients

  • 200 g of all-purpose flour
  • 100 g of sugar
  • 50 g of grated coconut
  • 1 egg
  • 80 g of soft butter
  • 1 packet of baking powder
  • A pinch of salt
  • 100 g of red fruits (fresh or frozen)
  • Icing sugar (for decorating, optional)

Preparation

  1. Preheat the oven to 180°C and prepare a baking sheet lined with parchment paper.
  2. In a bowl, mix the flour with the baking powder, grated coconut, and a pinch of salt.
  3. In another bowl, cream the soft butter with the sugar until you have a homogeneous and fluffy mixture.
  4. Add the egg to the butter and sugar mixture and continue to mix until it is well incorporated.
  5. Combine the dry ingredients with the wet mixture and mix until you have a uniform dough.
  6. Finally, gently fold the red fruits into the batter, taking care not to break them too much.
  7. Form balls of dough and place them on the lined baking sheet, slightly flattening the center to give the shape of a doughnut.
  8. Bake the doughnuts in the preheated oven for about 15-20 minutes or until golden.
  9. Let the doughnuts cool on a rack and, if desired, dust with icing sugar before serving.

Interesting Facts

Doughnuts are a very beloved shape in Italy and lend themselves to many variations. In this version, the encounter between the exotic taste of coconut and the tartness of the red fruits creates a pleasant contrast that can evoke tropical flavors.

If you don’t have red fruits available, you can opt for other types of fresh or dried fruit that pairs well with coconut, such as pineapple or dried apricots cut into small pieces. Enjoy your meal!
