Coconut and Lime Cookies

I can give you a recipe for delicious coconut and lime cookies with an Italian twist. To make them even more delightful, we’ll also add ricotta, which will make the cookies incredibly soft. Here are the ingredients and the procedure for preparing them.

Ingredients

  • 200 g of type 00 flour
  • 100 g of shredded coconut
  • 100 g of granulated sugar
  • 100 g of ricotta
  • 80 g of butter at room temperature
  • Grated zest of one lime
  • 1 egg
  • 1 teaspoon of baking powder
  • A pinch of salt

Preparation

  1. In a bowl, mix the softened butter with the sugar until it turns into a cream. Incorporate the egg and continue mixing.
  2. Add the ricotta and the grated lime zest, mixing well to blend the ingredients.
  3. Combine the sifted flour with the baking powder, shredded coconut, and a pinch of salt. Stir until a homogenous dough is formed.
  4. Prepare a baking sheet lined with parchment paper. With the dough, make small balls about 3 cm in diameter and place them on the baking sheet, slightly flattening them.
  5. Preheat the oven to 180 °C and bake the cookies for about 10-15 minutes or until the edges start to turn golden brown.
  6. Remove from the oven and let the cookies cool on a wire rack before serving.

Coconut is a beloved ingredient in modern Italian pastry, and it pairs perfectly with citrus such as lime.
