Coconut and Lemon Cookies

Ingredients

  • 100g of all-purpose flour
  • 120g of shredded coconut
  • 120g of sugar
  • 50g of melted butter
  • 1 egg
  • Grated zest of 1 untreated lemon
  • 1 pinch of salt
  • ½ teaspoon of baking powder

Preparation

  1. Prepare a bowl and mix the flour with the shredded coconut, sugar, pinch of salt, and baking powder.
  2. In a separate bowl, beat the egg and add it to the flour and coconut mixture.
  3. Add the melted butter and grated lemon zest, and mix all the ingredients until you obtain a homogeneous dough.
  4. Line a baking tray with parchment paper and, using a spoon, take portions of the dough to form slightly flattened balls.
  5. Place the balls on the baking tray, leaving some space between them.
  6. Bake in a preheated oven at 180 °C for about 10-15 minutes or until the cookies are golden.
  7. Remove the cookies from the oven and let them cool completely before serving.
