Coconut and Coffee Balls

Ingredients

  • 200 g of shredded coconut
  • 100 g of powdered sugar
  • 50 ml of cold espresso coffee
  • 2 tablespoons of unsweetened cocoa powder
  • 1 egg white (alternatively, glucose syrup or honey can be used to bind the mixture)
  • Granulated sugar or extra shredded coconut for coating

Preparation

  1. Prepare an espresso coffee and let it cool down completely.
  2. In a bowl, mix the shredded coconut with powdered sugar and unsweetened cocoa powder.
  3. Add the cold coffee and the lightly beaten egg white to the coconut mixture. If you do not want to use the egg white, you can replace it with an adequate amount of glucose syrup or honey to obtain a homogeneous and sticky mixture.
  4. Knead by hand until you have a uniform mixture that can hold its shape.
  5. Form balls from the mixture, using your hands or two teaspoons to help portion it out.
  6. Roll the balls in granulated sugar or extra shredded coconut, ensuring they are completely covered.
  7. Place the balls on a plate or tray and let them harden in the refrigerator for at least an hour before serving.
