Coconut and Chocolate Muffins

Preparation

  1. Preheat the oven to 180 °C.

  4. Combine the wet ingredients with the dry ingredients and stir gently until the batter is uniform. Avoid mixing too much to prevent the muffins from becoming hard.
  5. Fold in the chocolate chips into the batter, stirring briefly.
  6. Fill the muffin cups to about 2/3 of their height with the batter.
  7. Bake in the oven for 20-25 minutes or until the muffins are golden brown and a skewer inserted into them comes out clean.
  8. Once baked, remove them from the oven and let them cool on a wire rack.
