Coconut and Chocolate Chip Cake

Ingredients

  • 200 g of flour
  • 100 g of sugar
  • 100 g of butter at room temperature

Preparation

  1. Preheat the oven to 180 °C and prepare a cake pan by buttering and lightly flouring it.
  2. In a bowl, mix the sifted flour with the baking powder and salt.
  3. In another bowl, cream the butter with the sugar until you have a homogeneous and fluffy mixture.
  4. Add the eggs, one at a time, continuing to mix well after each addition.
  5. Incorporate the grated coconut into the mixture of butter, sugar, and eggs.
  6. Alternate adding the flour and coconut milk to the mixture, starting and ending with the flour, and mix well until you get a uniform batter.
  7. Finally, gently fold in the chocolate chips with a spatula or wooden spoon.
  8. Pour the batter into the prepared pan and level the surface with a spatula.
  9. Bake for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  11. If desired, you can dust the surface with powdered sugar before serving.
