Ingredients
- 200 g of flour
- 100 g of sugar
- 100 g of butter at room temperature
- 3 eggs
- 120 g of grated coconut
- 120 ml of coconut milk
- 1 sachet of baking powder
- 1 pinch of salt
- 100 g of chocolate chips
- Powdered sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C and prepare a cake pan by buttering and lightly flouring it.
- In a bowl, mix the sifted flour with the baking powder and salt.
- In another bowl, cream the butter with the sugar until you have a homogeneous and fluffy mixture.
- Add the eggs, one at a time, continuing to mix well after each addition.
- Incorporate the grated coconut into the mixture of butter, sugar, and eggs.
- Alternate adding the flour and coconut milk to the mixture, starting and ending with the flour, and mix well until you get a uniform batter.
- Finally, gently fold in the chocolate chips with a spatula or wooden spoon.
- Pour the batter into the prepared pan and level the surface with a spatula.
- Bake for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- If desired, you can dust the surface with powdered sugar before serving.
