Cocoa salami

Chocolate salami (or cocoa salami) is a no-bake Italian dessert that resembles the shape and appearance of a salami, but is obviously a sweet delicacy. Here is the recipe:

Ingredients

  • 250 g of dry biscuits
  • 100 g of butter at room temperature
  • 150 g of powdered sugar
  • 2 egg yolks
  • 100 g of unsweetened cocoa powder
  • 1 pinch of salt
  • 2 tablespoons of rum or other liquor of choice (optional)
  • Powdered sugar or grated coconut for finishing

Preparation

  1. Start by coarsely chopping the dry biscuits, making sure to leave some larger pieces to give the salami a more realistic look when sliced.

  2. In a large bowl, cream the soft butter with the powdered sugar until you achieve a smooth mixture.

  3. Add the egg yolks and a pinch of salt, mixing well to incorporate them into the mixture.

  4. Mix in the unsweetened cocoa powder and, if you decide to use it, the chosen liquor. Stir until the mixture is uniform.

  5. Fold in the chopped biscuits into the dough, making sure the biscuits are completely coated with the cocoa mixture.

  6. Pour the mixture onto a sheet of cling film and shape it into a salami, rolling it up tightly and sealing the ends.

  7. Let the chocolate salami set in the refrigerator for at least 4 hours or better yet, overnight.

  8. Before serving, roll the salami in powdered sugar or grated coconut to create the effect of “sliced salami”.

To serve it, cut the salami into slices about one centimeter thick. This dessert is perfect to be accompanied by a glass of passito or sweet wine at the end of a meal.
