Preparation

  1. Prepare the cocoa pasta by sifting the flour and cocoa into a large bowl. Form a volcano with an indentation in the center and crack the eggs into it. With a fork, start incorporating the flour and cocoa with the eggs, then knead with your hands until you get a smooth and homogeneous dough. If necessary, add a little water or flour to reach the desired consistency. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

  2. In the meantime, prepare the white chocolate filling. Chop the white chocolate and place it in a bowl. Heat the cream in a small saucepan until it almost boils, then pour it over the white chocolate. Wait a minute and then stir until a smooth ganache is obtained. Let it cool and then refrigerate until it hardens.

  3. Roll out the cocoa pasta with a pasta machine or rolling pin, until you get thin sheets.

  4. Arrange small piles of white chocolate ganache on half of the pasta sheets, spacing them properly.
