Cocoa Crepe

Cocoa crêpes are a delicious variant of the classic French crêpes. Here is the recipe for making them:

Ingredients

  • 250 ml of milk
  • 100 g of all-purpose flour
  • 30 g of cocoa powder
  • 50 g of granulated sugar
  • 2 eggs
  • A pinch of salt
  • Butter for greasing the pan

Preparation

  1. In a large bowl, break the eggs and add the sugar and a pinch of salt.
  2. Beat well with a whisk until the mixture is homogeneous.
  3. Add the sifted cocoa powder and continue mixing.
  4. Gradually incorporate the flour, alternating with the milk, and mix to avoid the formation of lumps. If necessary, you can help yourself with an immersion blender to make the batter smoother.
  5. The batter should be quite liquid but thick, similar to the consistency of a liquid cream.
  6. Let the batter rest for about 30 minutes at room temperature so that the gluten can relax.
  7. Heat a crepe maker or a non-stick pan over medium heat and lightly grease the bottom with a bit of butter.
  8. When the pan is hot, pour a small amount of batter and move the pan in a circular motion, spreading the batter evenly.
  9. Cook the crêpe for about 1-2 minutes per side or until small bubbles form on the surface and the edges can be easily lifted.
  10. Carefully flip the crêpe and cook the other side.
  11. Repeat the process with the rest of the batter, stacking the crêpes on a plate and covering them with kitchen paper to keep them warm.

To serve the cocoa crêpes, you can add a sprinkle of icing sugar, some chocolate spread, jam, or simply enjoy them with a bit of fresh cream.
