Cocoa and Hazelnut Cookies with Jam

Ingredients
- 150 g of all-purpose flour
- 50 g of unsweetened cocoa powder
- 100 g of sugar
- 100 g of butter at room temperature
- 1 egg
- 1 pinch of salt
- ½ teaspoon of vanilla extract (optional)
- 100 g of toasted and finely chopped hazelnuts
- Apricot jam or another flavor of your choice
- Powdered sugar for decoration (optional)
Preparation
- In a large bowl, sift the flour with the cocoa powder.
- Add the sugar, a pinch of salt, and the chopped hazelnuts.
- Add the butter in small pieces and the egg, and work the ingredients until you have a homogeneous dough. If desired, you can add the vanilla extract for an extra aroma.
- Shape the dough into a ball and wrap it in cling film. Put it in the refrigerator to rest for at least 30 minutes.
- Preheat the oven to 180 °C and prepare a baking sheet by lining it with parchment paper.
- Take the dough out and roll it out on a lightly floured surface until it is about 5 mm thick.
- Use a cookie cutter to form the cookies and place them on the prepared baking sheet. If you prefer, you can create a small hollow in the center of each cookie where you will later add the jam.
- Bake in the oven for about 10-12 minutes or until they are slightly golden on the edges.
- Remove the cookies from the oven and let them cool completely. If you created the hollow, fill it with a teaspoon of jam. Otherwise, you can simply spread a little jam on a cookie and top it with another, creating a sandwich.
- If desired, dust with powdered sugar before serving.
