Cocoa and Blueberry Plumcake

The cocoa and blueberry plumcake is a delicious variant of the classic plumcake. Below you will find the necessary ingredients and instructions for preparation.

Ingredients

  • 200 g of all-purpose flour
  • 50 g of unsweetened cocoa powder
  • 200 g of granulated sugar
  • 100 g of melted butter
  • 3 eggs
  • 120 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • 200 g of fresh or frozen blueberries
  • Powdered sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C and prepare a plumcake mold by greasing it with some butter and flouring it, or lining it with parchment paper.
  2. In a large bowl, sift the flour, cocoa powder, baking powder, and salt.
  3. In the bowl of a stand mixer or using an electric mixer, beat the eggs with the sugar until you obtain a light and fluffy mixture.
  4. Add the melted butter to the egg and sugar mixture, continuing to mix.
  5. Now incorporate the dry ingredients mixture, alternating with the milk and mix well until you have a smooth batter.
  6. Finally, gently add the blueberries, taking care not to break them, to distribute them evenly in the batter.
  7. Pour the batter into the prepared mold and level it with a spatula.
  8. Bake the plumcake for about 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove the plumcake from the oven and let it cool in the mold for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. If desired, once cool you can dust the surface with powdered sugar.

Trivia

Although the term “plumcake” might suggest the presence of plums (plum in English) in the dough, the name is actually a nod to old British recipes where dried plums and other fruits were indeed used. Today, the term is more universally associated with this type of loaf-shaped baked dessert, which can be enriched with various ingredients. If you want to add an Italian touch, consider using liquors such as Amaretto to further flavor the blueberries.
