Cocoa and Almonds Diamonds

Cocoa and almonds diamonds are simple and delicious cookies, perfect to accompany a good coffee or tea. Here is the recipe:

Ingredients

  • 250 g of all-purpose flour
  • 150 g of soft butter
  • 100 g of sugar
  • 50 g of bitter cocoa powder
  • 100 g of roughly chopped almonds
  • 1 egg
  • 1 pinch of salt
  • Icing sugar (optional, for decoration)

Preparation

  1. In a large bowl, cream the soft butter with the sugar until you have a smooth and fluffy mixture.
  2. Add the egg and continue to mix well.
  3. In another bowl, sift the flour with the cocoa and a pinch of salt.
  4. Gradually add the flour and cocoa mix to the butter, sugar, and egg mixture, stirring until a homogeneous dough is formed.
  5. Incorporate the chopped almonds into the dough and mix well.
  6. Divide the dough into two or three parts and form cylindrical rolls about 3-4 cm in diameter. Wrap the rolls in cling film and let them rest in the refrigerator for at least 30 minutes.
  7. Preheat the oven to 180 °C.
  8. Cut the rolls into slices about 1 cm thick and arrange them on a baking sheet lined with parchment paper, leaving a little space between each cookie.
  9. Bake in the oven for about 10-15 minutes or until the edges start to become slightly darker.
  10. Let the cookies cool on a wire rack and, if desired, before serving, dust them with icing sugar.

These delicious cookies are perfect for dipping and keep well in a tin box, maintaining their crunchiness. If you prefer a variant without cocoa, you can simply omit it and increase the amount of flour by 50 g. Happy baking and enjoy your cocoa and almonds diamonds!
