Coccochoc Cakes

The Coccochoc Cakes are delicious treats that blend the exotic taste of coconut with the intensity of chocolate. Here is an Italian variant with a touch of coffee to enhance the flavor of chocolate.

Ingredients

  • 150 g of all-purpose flour
  • 100 g of sugar
  • 150 g of grated coconut
  • 100 ml of coconut milk
  • 50 ml of espresso coffee
  • 2 eggs
  • 50 g of melted butter
  • 1 packet of baking powder
  • 100 g of dark chocolate
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the flour with the sugar, grated coconut, and a pinch of salt.
  3. In another bowl, beat the eggs and then add the coconut milk, coffee, and melted butter.
  4. Combine the liquid ingredients with the dry ones, mixing well until you get a homogeneous dough.
  5. Add the baking powder and mix gently.
  6. Roughly chop the dark chocolate and fold it into the batter.
  7. Pour the mixture into muffin tins previously buttered and floured or lined with paper cups.
  8. Bake in the oven for about 20-25 minutes or until a toothpick inserted in the center of the cakes comes out clean.
  9. Let the Coccochoc Cakes cool before serving.
