Cloud Omelettes

The Cloud Omelettes, also known as “Cloud Eggs” or “Egg Nests,” are a playful and airy take on the traditional omelette. Here is how to prepare them.

Ingredients

  • 4 eggs
  • Salt, as needed
  • Freshly ground black pepper, as needed
  • Finely chopped aromatic herbs to taste (for example, chives, parsley, or thyme), for garnish
  • Grated cheese to taste (optional)

Preparation

  1. Preheat the oven to 230 °C and line a tray with parchment paper.
  2. Carefully separate the yolks from the whites, making sure to keep the yolks whole.
  3. Whisk the egg whites to stiff peaks with a pinch of salt, using an electric mixer or a hand whisk. You can consider the egg whites ready when they don’t move even if you turn the container upside down.
  4. With the help of a spoon, place the whipped whites onto the prepared tray, forming four separate mounds.
  5. Use the back of the spoon to gently create a well in the center of each mound, where you will later place the yolk.
  6. Bake the egg whites for about 3-4 minutes, or until they become slightly golden and crispy on the edges.
  7. Carefully remove the tray from the oven and pour a yolk into each of the wells you have created in the egg whites.
  8. If you wish, add a pinch of black pepper and sprinkle some grated cheese over each yolk.
  9. Put back in the oven for another 2-3 minutes, or until the yolks are cooked to the desired doneness.
  10. Remove from the oven and serve immediately, garnished with the chopped aromatic herbs.
