Clam Soup

Clam soup is a delicious seafood dish, rich in flavor. Here is the recipe for preparing Italian-style clam soup.

Ingredients

  • 1 kg of true clams
  • 2 cloves of garlic
  • Chopped parsley to taste
  • 400 ml of tomato puree or peeled tomatoes
  • 4 tablespoons of extra virgin olive oil
  • Chili pepper to taste (optional)
  • 200 ml of dry white wine
  • 1 liter of fish broth or water
  • Slices of toasted bread
  • Salt to taste

Preparation

  1. Start by purging the clams. Put them in a bowl with salt water for at least an hour, changing the water a couple of times. This process helps to remove the sand from the clams.
  2. Drain the clams and rinse them to remove the last residues of sand.
  3. In a large pot, sauté the finely chopped garlic in extra virgin olive oil. If you like, also add a bit of chili pepper.
  4. Add the clams and cover with the lid. Cook for a few minutes until they open.
  5. Deglaze with the white wine and allow the alcohol to evaporate.
  6. Add the tomato puree or chopped peeled tomatoes, and the fish broth. Bring to a light boil and cook for about 15 minutes.
  7. Adjust the salt, if necessary. Keep in mind that clams are already salty on their own.
  8. Add the chopped parsley and cook for another 2 minutes.
  9. Serve the hot soup accompanied by slices of toasted or grilled bread.

Clam soup is a dish much appreciated in Italy, especially in the coastal regions where the clams are very fresh. Pair it with a glass of fresh white wine, possibly the same one you used for cooking, to enhance the taste of the fish.
