Clam, Mussel, and Genuine Venus Clam Soup

Ingredients
- 500 grams of clams
- 500 grams of mussels
- 500 grams of genuine venus clams
- 2 cloves of garlic
- Fresh parsley to taste
- 200 ml of dry white wine
- Extra virgin olive oil to taste
- Chili pepper (optional, according to taste)
- 400 grams of peeled tomatoes or cherry tomatoes
- Salt to taste
Preparation

First, clean the clams, mussels, and genuine venus clams well. To do this, let them purge in cold salted water for at least an hour, changing the water a couple of times. Then, scrub the shells under running water to remove any impurities.

In a large saucepan, sauté the finely chopped garlic cloves in extra virgin olive oil. If you desire a spicy touch, also add the chili pepper.

When the garlic is golden, add the clams, mussels, and genuine venus clams. Let them sauté for a minute, then deglaze with the white wine and let the alcohol evaporate.

Add the crushed peeled tomatoes or cherry tomatoes and cook over moderate heat for about 15 minutes until all the shells have opened and the sauce has reduced to a nice consistency.

During cooking, taste and adjust for salt if necessary. Remember that the seafood will release salty water which might already be enough to season the soup.

Once cooking is complete, remove from the heat and sprinkle with plenty of chopped fresh parsley.
Serve the soup hot with slices of toasted bread, preferably charred on a grill and rubbed with garlic, which you can use to soak up the delicious sauce.
