Cirashi Sushi

Ingredients

  • 2 cups of sushi rice
  • 2 and a half cups of water
  • 60 ml of rice vinegar
  • 4 tablespoons of sugar
  • 1 teaspoon of salt
  • Various toppings such as:
    • Slices of raw fish (salmon, tuna, etc.)
    • Fish eggs (like salmon roe or capelin eggs)
    • Julienned vegetables (cucumbers, carrots, daikon)
    • Avocado
    • Nori seaweed cut into strips
    • Sesame seeds

Preparation

  1. Start by washing the rice several times in running water until the runoff water becomes almost clear. This is to remove the excess starch.

  2. Cook the rice with the 2 and a half cups of water. Use a pot with a lid or a rice cooker, and once the water reaches a boil, lower the flame and let it cook until the water is completely absorbed and the rice is soft (usually 15-20 minutes).

  3. While the rice is cooking, gently heat the rice vinegar in a saucepan and dissolve the sugar and salt in it.

  4. When the rice is ready, transfer it to a large bowl, preferably wooden, and season it with the vinegar, sugar, and salt mixture. Stir gently to avoid breaking the grains and let it cool down slightly, better if in the wind or with the help of a fan.

  5. After the rice has cooled, place it on a large serving dish or bowl and start decorating with your choice of toppings. Slice the raw fish into thin slices and lay them over the rice. Also add strips of vegetables, slices of avocado, nori seaweed, fish eggs, and sesame seeds.

  6. Serve the Chirashi Sushi accompanied by soy sauce, wasabi, and pickled ginger as desired.
