Cinnamon Jelly

Cinnamon Jelly is a typical Sicilian dessert, simple and refreshing, ideal to conclude a meal or as a snack during hot days. Here is the recipe:

Ingredients

  • 1 liter of water
  • 300 g of sugar
  • 25 g of cinnamon sticks
  • 80 g of cornstarch (or cornflour)
  • Ground cinnamon for garnish

Preparation

  1. In a large pot, pour the water and add the cinnamon sticks. Bring to a boil and let it simmer for a few minutes so that the water is well-flavored with cinnamon.

  2. Remove the cinnamon sticks from the water with a slotted spoon. Add the sugar and stir until completely dissolved.

  3. Meanwhile, in a separate bowl, dissolve the cornstarch in a little cold water, making sure there are no lumps.

  4. Pour the cornstarch mixture into the now sweetened cinnamon-flavored water, ensuring you continuously stir with a whisk to avoid the formation of lumps.

  5. Continue cooking over medium-low heat and stir until the mixture begins to thicken.

  6. When the jelly has reached the desired consistency, remove from heat and pour into molds or a tray. Allow to cool to room temperature.

  7. Once cool, put the cinnamon jelly in the refrigerator for at least 3-4 hours so that it becomes firm.

  8. Before serving, garnish with a little ground cinnamon.
