Chocolate tart with pears and pecan nuts

Ingredients
- 250 g of type 00 flour
- 125 g of cold butter, cubed
- 100 g of icing sugar
- 1 large egg
- A pinch of salt
- Grated zest of 1 lemon (optional)
For the filling:
- 100 g of dark chocolate
- 100 g of coarsely chopped pecan nuts
- 2 ripe but firm pears, peeled, halved, and cored
- 2 tablespoons of brown sugar
- 1 egg for brushing the pastry (optional)
Preparation
- In a large bowl, mix the flour with the icing sugar and a pinch of salt. Add the cold cubed butter and quickly work the mixture with your fingertips until you have a sandy mixture.
- Add the egg and knead until the dough is uniform. If you like, you can also add the grated lemon zest for a touch of freshness.
- Form the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.
- In the meantime, preheat the oven to 180 °C.
- Roll out the shortcrust pastry on a floured surface, creating a disc that will gently fit into a previously buttered and floured tart pan.
- Press the pastry well into the bottom and sides, and remove any excess by rolling a rolling pin over the edge of the pan.
- Spread the broken dark chocolate over the base of the tart.
- Place the pear halves with the cut side down, and sprinkle them with brown sugar.
- Also distribute the chopped pecan nuts over the surface.
- If you wish, you can brush the edges of the tart with a beaten egg for a shiny and golden finish.
- Bake the tart for about 30-35 minutes or until the pastry is golden and the pears are soft.
- Let cool completely before serving.
