Chocolate Swirl Tart

The chocolate swirl tart is an engaging and tasty dessert. Here’s how to prepare it.

Ingredients

  • 300 g of all-purpose flour
  • 150 g of cold butter, cut into pieces
  • 120 g of icing sugar
  • 1 large egg and 1 yolk
  • Grated zest of 1 untreated lemon
  • A pinch of salt
  • Cocoa powder as needed for the chocolate part
  • 300 g of apricot jam (or another flavor of your liking)
  • Icing sugar for decoration

Preparation

  1. Start by preparing the shortcrust pastry: in a large bowl, combine the sifted flour, cold butter in pieces, icing sugar, lemon zest, and a pinch of salt. Quickly work the ingredients with your fingertips until you get a sandy mixture.
  2. Add the egg and yolk and knead quickly until you form a homogeneous dough. Divide the shortcrust pastry into two parts, one slightly larger than the other.
  3. In the smaller piece, incorporate enough cocoa powder to get a chocolate shortcrust pastry. Wrap both pieces of dough in cling film and let them rest in the refrigerator for at least 30 minutes.
  4. Roll out the light-colored dough into a disc and line a tart pan with it, previously buttered and floured. Prick the bottom with a fork.
  5. Roll out the chocolate shortcrust pastry to the same thickness as the other dough.
  6. Spread a uniform layer of jam on the light base in the tart pan.
  7. With a knife or a pastry wheel, cut the chocolate dough into strips about 1 cm wide and roll them up on themselves to create “swirls”.
  8. Gently place the chocolate pastry swirls on the jam, arranging them radially or according to the pattern you prefer.
  9. Bake in a preheated oven at 180°C for about 30-35 minutes or until the light pastry is golden.
  10. Allow the tart to cool completely before dusting with icing sugar for decoration.
