Chocolate Swirl Tart

Ingredients
- 300 g of all-purpose flour
- 150 g of cold butter, cut into pieces
- 120 g of icing sugar
- 1 large egg and 1 yolk
- Grated zest of 1 untreated lemon
- A pinch of salt
- Cocoa powder as needed for the chocolate part
- 300 g of apricot jam (or another flavor of your liking)
- Icing sugar for decoration
Preparation
- Start by preparing the shortcrust pastry: in a large bowl, combine the sifted flour, cold butter in pieces, icing sugar, lemon zest, and a pinch of salt. Quickly work the ingredients with your fingertips until you get a sandy mixture.
- Add the egg and yolk and knead quickly until you form a homogeneous dough. Divide the shortcrust pastry into two parts, one slightly larger than the other.
- In the smaller piece, incorporate enough cocoa powder to get a chocolate shortcrust pastry. Wrap both pieces of dough in cling film and let them rest in the refrigerator for at least 30 minutes.
- Roll out the light-colored dough into a disc and line a tart pan with it, previously buttered and floured. Prick the bottom with a fork.
- Roll out the chocolate shortcrust pastry to the same thickness as the other dough.
- Spread a uniform layer of jam on the light base in the tart pan.
- With a knife or a pastry wheel, cut the chocolate dough into strips about 1 cm wide and roll them up on themselves to create “swirls”.
- Gently place the chocolate pastry swirls on the jam, arranging them radially or according to the pattern you prefer.
- Bake in a preheated oven at 180°C for about 30-35 minutes or until the light pastry is golden.
- Allow the tart to cool completely before dusting with icing sugar for decoration.

The swirl, with its inviting appearance, adds a dramatic touch to the classic tart. Each slice will show the balance between the sweetness of the jam filling and the intense scent of chocolate, making it a pleasure for both the eyes and the palate.
