Chocolate-Stuffed Pancakes
17/11/2023Chocolate-stuffed pancakes are a delicious variant of the classic American pancake. Here’s the recipe with an Italian twist.
Ingredients
- 150 g of all-purpose flour
- 2 tablespoons of granulated sugar
- 1 large egg
- 200 ml of semi-skimmed milk
- 1 teaspoon of baking powder
- 1 pinch of salt
- 30 g of melted butter
- 100 g of chocolate chips or pieces of Italian dark chocolate, if you want a richer version
Preparation
- In a bowl, mix the flour with the sugar, baking powder, and salt.
- In another bowl, beat the egg and add the milk, then pour the liquid mixture over the dry ingredients.
- Add the melted butter and mix until you have a smooth batter. Let the mixture rest for about 5-10 minutes.
- Heat a non-stick skillet over medium heat and, if necessary, lightly grease with butter or oil.
- Pour a small ladle of batter onto the skillet, forming a circle. Distribute some chocolate chips in the center.
- When bubbles appear on the surface of the pancake, gently place more chocolate chips on the uncooked side and then flip it with a spatula.
- Cook for another 2 minutes or until both sides are golden.
- Repeat until all the batter is used up, adding chocolate chips to each pancake.
Serve the freshly made pancakes, maybe with a dusting of powdered sugar, maple syrup, or accompanied by fresh fruit.
Fun Fact
The pancake is a typical dish of the American breakfast but has very ancient origins; the Romans already cooked something similar called “alita dolcia.” In the Anglo-Saxon world, their popularity is so great that there is even a “National Pancake Day”.
