Chocolate-Stuffed Pancakes

Chocolate-stuffed pancakes are a delicious variant of the classic American pancake. Here’s the recipe with an Italian twist.

Ingredients

  • 150 g of all-purpose flour
  • 2 tablespoons of granulated sugar
  • 1 large egg
  • 200 ml of semi-skimmed milk
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 30 g of melted butter
  • 100 g of chocolate chips or pieces of Italian dark chocolate, if you want a richer version

Preparation

  1. In a bowl, mix the flour with the sugar, baking powder, and salt.
  2. In another bowl, beat the egg and add the milk, then pour the liquid mixture over the dry ingredients.
  3. Add the melted butter and mix until you have a smooth batter. Let the mixture rest for about 5-10 minutes.
  4. Heat a non-stick skillet over medium heat and, if necessary, lightly grease with butter or oil.
  5. Pour a small ladle of batter onto the skillet, forming a circle. Distribute some chocolate chips in the center.
  6. When bubbles appear on the surface of the pancake, gently place more chocolate chips on the uncooked side and then flip it with a spatula.
  7. Cook for another 2 minutes or until both sides are golden.
  8. Repeat until all the batter is used up, adding chocolate chips to each pancake.

Serve the freshly made pancakes, maybe with a dusting of powdered sugar, maple syrup, or accompanied by fresh fruit.

Fun Fact

The pancake is a typical dish of the American breakfast but has very ancient origins; the Romans already cooked something similar called “alita dolcia.” In the Anglo-Saxon world, their popularity is so great that there is even a “National Pancake Day”.
