Chocolate Salami

Chocolate salami is a typical Italian dessert, simple and delicious, that resembles the shape of a salami but is entirely sweet. Here is the basic recipe with a small Italian twist:

Ingredients

  • 200 grams of dry biscuits (like Maria or Digestive)
  • 100 grams of butter
  • 150 grams of powdered sugar
  • 2 egg yolks
  • 100 grams of bitter cocoa powder
  • 100 grams of chopped hazelnuts or almonds (optional, according to your preference)
  • Rum or orange liqueur for flavoring (optional)

Preparation

  1. Roughly chop the biscuits. If you choose to use hazelnuts or almonds, lightly toast and chop them.
  2. Melt the butter in a saucepan or in the microwave and let it cool slightly.
  3. In a bowl, beat the yolks with the powdered sugar until light and frothy.
  4. Add the melted butter and the bitter cocoa powder, mixing until smooth.
  5. Incorporate the chopped biscuits and, if desired, the nuts and a few tablespoons of rum or liqueur for flavoring.
  6. Spread the mixture onto a piece of parchment paper and shape it into a salami, wrapping it well and tightening the ends as if it were a candy.
  7. Allow to rest in the refrigerator for at least 3 hours before serving.
  8. Before serving, dust with powdered sugar to simulate the ‘mold’ of the salami.

Curiosity

Chocolate salami is a no-bake dessert that comes from Italian culinary tradition, particularly from central and southern Italy. The recipe dates back to at least the post-war period, a time when it was hard to find ready-made sweets. The dessert can be customized with the addition of liquors or spices, such as cinnamon, and is sometimes enriched with dried or candied fruit. In some versions, melted chocolate is also used, which can partly or completely replace the cocoa powder.

Remember to use very fresh and high-quality yolks since they will remain raw. Happy preparation and enjoy your meal!
