Chocolate Pudding and Raspberry Coulis

Here is the recipe for a delicious chocolate pudding with raspberry coulis.

Ingredients

  • 200 g of dark chocolate
  • 500 ml of whole milk
  • 100 g of sugar
  • 3 egg yolks
  • 40 g of cornstarch (cornflour)
  • 1 teaspoon of vanilla extract
  • A pinch of salt

For the raspberry coulis:

  • 250 g of fresh or frozen raspberries
  • 50 g of powdered sugar
  • Juice of 1/2 lemon

Preparation

  1. In a saucepan, bring the milk to a boil with the vanilla and pinch of salt.
  2. Meanwhile, in a bowl, mix the egg yolks with sugar until you get a light and foamy mixture.
  3. Add the cornstarch to the egg yolks and mix until there are no lumps.
  4. Pour the hot milk in a thin stream into the egg mixture, stirring continuously.
  5. Transfer everything back into the saucepan and cook over medium-low heat, still stirring until the mixture thickens.
  6. Remove from the heat and add the broken chocolate pieces, stir until completely melted.
  7. Pour the pudding into individual molds or into a large bowl, cover with cling film touching the surface to prevent skin formation, and let cool.
  8. Refrigerate for at least 4 hours, or until it is well set.

For the raspberry coulis:

  1. Blend the raspberries with powdered sugar and lemon juice until smooth.
  2. Strain the coulis through a sieve to remove seeds and achieve a fine texture.

To serve, gently unmold the puddings onto plates and garnish with the raspberry coulis by drizzling it gently over or around the pudding.
