Chocolate Pudding

  3. Heat the milk in another pot until it is warm but not boiling. If you are using a vanilla pod, slit it lengthwise and scrape out the seeds, adding both the seeds and the pod to the warm milk to infuse it.

  4. Remove the vanilla pod from the milk (if used), then gradually pour the warm milk over the mixture of cornstarch, sugar, and salt, stirring continuously to avoid the formation of lumps.

  5. Place the saucepan over medium heat and continue stirring until the mixture begins to boil and thickens.

  6. Remove the saucepan from the heat as soon as the mixture reaches the desired consistency (it should be creamy and lump-free).

  7. Add the broken dark chocolate to the hot mixture and stir until it has completely melted and incorporated into the mixture.

  8. Pour the mixture into chosen containers (pudding molds, glasses, small bowls) and let cool for a few minutes.

  9. Cover the containers with plastic wrap to prevent a “skin” from forming on the surface and then place in the refrigerator for at least 2 hours before serving.

  10. When serving, you can garnish with whipped cream, chocolate shavings, or fresh fruit as desired.

The pudding can be enriched during the preparation with other ingredients such as instant coffee, a splash of liqueur, or spices like cinnamon or chili pepper, to give it that unique touch. In Italy, there is a version called “budino di San Martino,” served on Saint Martin’s Day, which includes the addition of crumbled amaretti biscuits in the mixture.
