Chocolate Naked Cake

The Chocolate Naked Cake is a “nude” cake, characterized by its clearly visible layers of sponge cake and cream, without an external covering such as icing all over the surface. Here’s how to prepare a simple version.

Ingredients

  • 250 g of flour 00
  • 50 g of unsweetened cocoa powder
  • 200 g of granulated sugar
  • 4 eggs
  • 100 ml of seed oil
  • 100 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt

For the cream:

  • 500 g of mascarpone
  • 100 g of powdered sugar
  • 200 ml of whipping cream

Preparation

  1. Preheat the oven to 180 °C and prepare two or three round cake pans, greasing them and flouring them or lining them with parchment paper.
  2. In a bowl, sift the flour with the cocoa, the baking powder, and a pinch of salt.
  3. In another bowl, whisk the eggs with the granulated sugar until they turn light and foamy.
  4. Add the oil and milk to the eggs and continue stirring.
  5. Fold in the sifted dry ingredients, mixing gently until the mixture is smooth.
  6. Divide the batter equally among the prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the sponge cakes from the oven and let them cool completely on a wire rack.

For the cream: 8. Whip the whipping cream until it is very firm. 9. In another container, cream the mascarpone with the powdered sugar, then gently fold in the whipped cream to avoid deflating it.

Assembly: 10. Level the sponge cake layers if necessary. Place the first layer of sponge cake on a plate and spread a uniform layer of cream. 11. Stack the second layer of sponge cake and repeat the step with the cream. Continue like this with all the layers. 12. Once the cake is assembled, spread a thin layer of cream on the sides to give the typical “naked” look to the Naked Cake. 13. You can decorate with fresh fruit, sprinkle with cocoa powder, or leave it simple.
