Chocolate mousse and vanilla flavor

Here is a simple recipe to prepare a chocolate mousse flavored with vanilla.

Ingredients

  • 200g of good quality dark chocolate
  • 3 eggs
  • 50g of sugar
  • 1 vanilla pod (or 1 teaspoon of vanilla extract)
  • 200ml of fresh cream for desserts

Preparation

  1. Break the chocolate into pieces and melt it in a bain-marie, taking care not to burn it. Once melted, let it cool to room temperature.

  2. Separate the yolks from the egg whites. In a bowl, whip the yolks with the sugar until you have a frothy and light mixture.

  3. Slit the vanilla pod lengthwise and scrape the inside with the tip of a knife to extract the seeds. Add them to the mixture of yolks and sugar, or add the vanilla extract, and mix well.

  4. Add the melted and cooled chocolate to the yolk mixture and blend gently.

  5. In another bowl, whip the egg whites until stiff. Fold the whipped egg whites into the chocolate mixture, being careful not to deflate them, with gentle movements from the bottom upwards.

  6. In another bowl, whip the fresh cream until it is thick and frothy, but be careful not to overwhip it to prevent it from becoming buttery.

  7. Gently fold in the whipped cream into the mixture as well, to maintain the airy structure of the mousse.

  8. Pour the mousse into individual cups or a large container, and let it rest in the refrigerator for at least 4 hours, preferably overnight.

  9. Before serving, you can decorate with chocolate shavings, fresh berries, or a dusting of bitter cocoa, according to your tastes.
