Preparation
- Start with the sponge cake: preheat the oven to 180 °C. Separate the yolks from the whites. Whip the yolks with half of the sugar until you have a light and fluffy mixture. Beat the egg whites to stiff peaks with a pinch of salt and the remaining sugar. Gently fold the two mixtures together and then incorporate the sifted flour, mixing very gently.
