Chocolate Meringue Ice Cream
17/11/2023Chocolate meringue ice cream is a very indulgent cold dessert and represents a frozen variation of the classic meringue. Here is a possible recipe:
Ingredients
- 400 ml of fresh cream to whip
- 150 g of sugar
- 4 egg yolks
- 100 g of dark chocolate
- 1 tablespoon of cocoa powder
- 200 g of meringues

- Melt the chocolate in a double boiler or microwave and mix it with the egg and sugar mixture.
- Add the sifted cocoa powder and mix well to avoid lumps.
- Whip the very cold cream with a pinch of salt until it becomes firm.
- Gently fold the whipped cream into the chocolate mixture, being careful not to deflate it.
- Separately, roughly crumble the meringues and add them to the mixture.
- Pour the mixture into a mold lined with plastic wrap or into an ice cream maker if available, and freeze for at least 4-5 hours or until the ice cream solidifies.
- Before serving, remove from the freezer and let it rest for a few minutes at room temperature to facilitate slicing the meringue.
- Slice and serve immediately.
Curiosity
Meringue is a dessert that combines the crunchiness of meringues with the creaminess of ice cream. In the chocolate version, the rich and intense taste of cocoa perfectly matches the sweetness of the meringues, creating a pleasant contrast.
