Chocolate Ice Cream Log

Ingredients
- 200 g of dark chocolate
- 100 g of sugar
- 4 eggs
- 300 ml of whipping cream
- 2 tablespoons of milk
- 2 tablespoons of chocolate or coffee liqueur (optional)
- Cocoa powder for decorating
Preparation
- Begin by melting the chocolate in a double boiler along with the milk. Once the chocolate is completely melted, remove it from the heat and let it cool.
- Separate the yolks from the whites. Beat the yolks with the sugar until you have a frothy and light mixture.
- Combine the melted chocolate with the whipped yolks and mix gently.
- In another bowl, whip the egg whites until they form stiff peaks.
- Whip the cream as well, but be careful not to overdo it; it should remain soft.
- Fold the whipped egg whites into the chocolate and yolk mixture, mixing gently from top to bottom so as not to deflate the mixture.
- Add the whipped cream to the mixture, combining it with the same care.
- If you wish, you can flavor your log with two tablespoons of chocolate or coffee liqueur, gently folding it into the batter.
- Pour the obtained mixture into a plumcake mold lined with cling film. This will facilitate the ice cream’s removal once it has solidified.
- Place in the freezer for at least 4 hours, or until the log is completely solidified.
- Before serving, flip the log onto a serving dish and remove it from the mold. Sprinkle the surface with cocoa powder for a finishing touch.

The frozen log, also known as semifreddo, is a very versatile dessert that you can personalize by adding nuts, chocolate chips, or crumbled cookies inside. During the holidays, especially at Christmas, it is a tradition to serve a Christmas log, or “Bûche de Noël” in French, which resembles the shape of a log to be burned in the fireplace and symbolizes warmth and light during the winter solstice.
