Chocolate Eggs Filled with Pear Mousse

Ingredients

For the chocolate eggs:

Preparation

Chocolate eggs:

  1. Start by tempering the chocolate. Finely chop the chocolate and melt two-thirds in a double boiler, not exceeding 45-50 °C.
  2. Remove the chocolate from the heat and add the remaining chopped chocolate, stirring continuously until it melts. This process will lower the temperature.
  3. Continue stirring until the chocolate reaches 31-32 °C. This process is essential for chocolate to be glossy and crisp once set.
  4. Pour the chocolate into egg-shaped molds and rotate them to cover evenly. Empty the excess chocolate from the molds and let them solidify upside down on a rack.
  5. Once solidified, gently remove the eggs from the molds.

Pear mousse:

  1. Soak the gelatin sheets in cold water for at least 10 minutes.
  2. Peel the pears, remove the cores, and cut them into pieces. Cook them with a tablespoon of water and powdered sugar until they have softened.
  3. Puree the pears into a smooth puree. Squeeze out the gelatin (or dissolve the agar-agar in a very little hot water), add it to the still warm pear puree, and mix well until completely dissolved.
  4. Whip the cream and gently fold it into the cold pear mixture to avoid deflating it.
  5. Transfer the mousse into a pastry bag and fill the previously prepared solidified chocolate eggs. Let them rest in the fridge for at least an hour.
