Chocolate Dream Tart
17/11/2023Here is the recipe for the Chocolate Dream Tart, an irresistible dessert for chocolate lovers.
Ingredients
- 250 g of type 00 flour
- 150 g of cold butter
- 100 g of powdered sugar
- 1 large egg and 1 yolk
- Grated zest of 1 lemon
- A pinch of salt
- Unsweetened cocoa powder, 30 g for the chocolate shortcrust pastry
For the cream:
- 250 g of dark chocolate
- 200 ml of fresh cream
- 2 tablespoons of powdered sugar
- 1 teaspoon of vanilla extract (or zest of 1 orange for a citrus variant)
Preparation
- Start with the chocolate shortcrust pastry: in a bowl, combine the sifted flour with the cocoa and powdered sugar. Add the cold butter, cut into pieces, and start working the dough with your fingertips to get a sandy mixture.
- Add the egg, the yolk, the lemon zest, and a pinch of salt. Quickly work the dough until it forms a ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
- In the meantime, prepare the chocolate cream. Break the dark chocolate into pieces and put it in a bowl. Bring the cream almost to a boil and then pour it over the chocolate. Let it rest for a minute and then mix until you get a smooth cream. Add the powdered sugar and vanilla extract, mix, and let it cool.
- Roll out the chocolate shortcrust pastry on a floured surface and line a previously buttered and floured tart pan with it. Prick the bottom with a fork and bake blind at 180 °C for about 15 minutes.
- Once the base is cooked, let it cool completely and then pour in the chocolate cream. Allow to set in the fridge for at least 2 hours before serving.
