Chocolate Dream Tart

Ingredients

  • 250 g of type 00 flour
  • 150 g of cold butter
  • 100 g of powdered sugar
  • 1 large egg and 1 yolk
  • Grated zest of 1 lemon
  • A pinch of salt
  • Unsweetened cocoa powder, 30 g for the chocolate shortcrust pastry

For the cream:

  • 250 g of dark chocolate
  • 200 ml of fresh cream
  • 2 tablespoons of powdered sugar
  • 1 teaspoon of vanilla extract (or zest of 1 orange for a citrus variant)

Preparation

  1. Start with the chocolate shortcrust pastry: in a bowl, combine the sifted flour with the cocoa and powdered sugar. Add the cold butter, cut into pieces, and start working the dough with your fingertips to get a sandy mixture.
  2. Add the egg, the yolk, the lemon zest, and a pinch of salt. Quickly work the dough until it forms a ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
  3. In the meantime, prepare the chocolate cream. Break the dark chocolate into pieces and put it in a bowl. Bring the cream almost to a boil and then pour it over the chocolate. Let it rest for a minute and then mix until you get a smooth cream. Add the powdered sugar and vanilla extract, mix, and let it cool.
  4. Roll out the chocolate shortcrust pastry on a floured surface and line a previously buttered and floured tart pan with it. Prick the bottom with a fork and bake blind at 180 °C for about 15 minutes.
  5. Once the base is cooked, let it cool completely and then pour in the chocolate cream. Allow to set in the fridge for at least 2 hours before serving.
