Chocolate Doughnut with Hazelnut Cream

Preparing a chocolate doughnut with hazelnut cream is an excellent choice for a decadent dessert. Here’s how to make it:

Ingredients

For the doughnut:

  • 200 g of all-purpose flour
  • 40 g of unsweetened cocoa powder
  • 200 g of granulated sugar
  • 100 g of butter at room temperature
  • 3 large eggs
  • 100 ml of milk
  • 1 sachet of baking powder
  • A pinch of salt

For the hazelnut cream:

  • 150 g of roasted and peeled hazelnuts
  • 100 g of powdered sugar
  • 50 g of unsweetened cocoa powder
  • 80 ml of seed oil (such as sunflower or corn oil, to not overpower the taste of the hazelnuts)
  • 1 pinch of salt
  • 1/2 teaspoon of vanilla extract (optional)

Preparation

For the doughnut:

  1. Preheat the oven to 180 °C (356 °F) and grease and flour a doughnut pan.
  2. In a large bowl, cream the butter with the sugar until light and fluffy.
  3. Add the eggs, one at a time, continuing to stir.
  4. Mix in the milk and stir until the mixture is homogeneous.
  5. Then add the flour, cocoa, pinch of salt, and sifted baking powder, mixing well to avoid lumps.
  6. Pour the batter into the previously prepared pan.
  7. Bake for about 35-40 minutes or until a toothpick inserted into the center of the doughnut comes out clean.
  8. Let the doughnut cool in the pan for about 10 minutes, then transfer it onto a wire rack to cool completely.

For the hazelnut cream:

  1. Finely grind the hazelnuts in a mixer until they turn into a flour.
  2. Add powdered sugar, cocoa, salt, and, if you like, vanilla extract.
  3. With the mixer running, slowly pour in the seed oil until you achieve a smooth and spreadable cream. If the cream is too thick, you can add a bit more seed oil.
  4. Taste and adjust the sweetness or cocoa as necessary, according to your preference.

Once the doughnut is cool, you can cut it horizontally in half and fill it with the hazelnut cream, or simply spread the cream on the surface.

Curiosity

The doughnut is a much-loved dessert in Italy; in its simplicity, it is versatile and lends itself to many variations. Adding a hazelnut cream, a typical ingredient from Piedmont, especially in the areas of Alba and Langhe, is an excellent way to enrich the flavor of this dessert and create a perfect match with chocolate.
