Chocolate Covered Coconut Biscuits

Chocolate covered coconut biscuits are delicious treats, perfect to accompany a good coffee or as a snack. Here’s how to prepare them Italian style, with a delicious twist.

Ingredients

  • 150 g of type 00 flour
  • 120 g of sugar
  • 200 g of grated coconut
  • 2 large eggs
  • 1 pinch of salt
  • Grated zest of 1 lemon (optional for a fresh touch)
  • 1 teaspoon of vanilla extract (optional)
  • 100 g of dark chocolate for the coating

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  2. In a large bowl, mix the grated coconut, flour, sugar, and pinch of salt.
  3. Add the eggs and, if you like, the grated lemon zest and vanilla extract.
  4. Mix the mixture until you get a homogeneous and sticky dough.
  5. With the help of two spoons or damp hands, form walnut-sized balls and slightly flatten them.
  6. Arrange the biscuits on the prepared tray, leaving a little space between them.
  7. Bake in the oven for about 12-15 minutes or until golden brown.
  8. Allow the biscuits to cool completely before proceeding with the chocolate coating.
  9. Melt the chocolate in a double boiler or microwave, being careful not to burn it.
  10. Partially dip or completely cover the biscuits in the melted chocolate and place them on a wire rack or parchment paper to dry the coating.
  11. Once the chocolate has solidified, the biscuits are ready to be enjoyed.
