Chocolate Cheesecake

Ingredients

  • For the base:

    • 200 g of dry biscuits (such as Digestive or chocolate biscuits)
    • 100 g of melted butter
  • For the filling:

    • 500 g of cream cheese (like Philadelphia)
    • 100 g of powdered sugar
    • 200 g of dark chocolate
    • 3 eggs
    • 1 teaspoon of vanilla extract
    • 1 pinch of salt
    • 30 ml of espresso coffee (optional, for an Italian note)
  • For the ganache:

    • 100 g of dark chocolate
    • 100 ml of whipping cream

Preparation

  1. Start by finely grinding the biscuits and mixing them with the melted butter. Press the mixture onto the bottom of a previously buttered springform pan, creating the base for the cheesecake. Put it in the fridge while you prepare the filling.

  2. For the filling, melt the dark chocolate in a bain-marie or in the microwave and let it cool down. In the meantime, beat the cream cheese with the powdered sugar until you achieve a smooth cream. Add the eggs one at a time, then the vanilla extract, salt, and melted chocolate. If you wish, add also the espresso coffee for a deep and all-Italian note.

  3. Pour the cheese filling over the cooled biscuit base and bake in a preheated oven at 160 °C for about 1 hour or until the surface is slightly golden and the cheesecake seems set on the edges but still slightly wobbly in the center.

  4. While the cheesecake is cooling, prepare the ganache by heating the cream without bringing it to a boil and pouring it over the chopped dark chocolate. Stir until it becomes smooth and homogeneous.

  5. Pour the ganache over the cooled cheesecake and let it rest in the refrigerator for at least 4 hours before serving.
