Chocolate Castagnole

Chocolate castagnole are a delicious variation of the classic Italian carnival treats called castagnole. Here’s how to make them:

Ingredients

  • 250 g of type 00 flour
  • 50 g of unsweetened cocoa powder
  • 50 g of sugar
  • 2 eggs
  • 50 g of soft butter
  • 1 packet of baking powder
  • A pinch of salt
  • Grated zest of 1 orange (or 1 lemon)
  • 1 tablespoon of rum (optional)
  • Oil for frying
  • Icing sugar for decoration

Preparation

  1. Sift the flour, cocoa, and baking powder together in a bowl. Add a pinch of salt and mix.
  2. In another large bowl, beat the eggs with the sugar until you have a frothy mixture.
  3. Add the soft butter and the grated zest of the orange or lemon to the egg mixture. If desired, you can add a tablespoon of rum for more flavor.
  4. Fold the dry ingredients into the wet mixture, mixing well to obtain a smooth and homogeneous dough.
  5. Let the dough rest for about 30 minutes in the refrigerator, covered with cling film.
  6. Heat the oil in a deep fryer or a high-sided pan. Once it has reached the correct temperature (about 175 °C), take small portions of dough with your hands or with two teaspoons and shape them into round or slightly oval shapes.
  7. Fry the castagnole a few at a time, turning them frequently, until they puff up and turn golden.
  8. Drain them on paper towels to remove excess oil.
  9. Roll them in icing sugar before serving, while they’re still hot.

Curiosity

The name castagnole is inspired by their resemblance to chestnuts, both in their round shape and slightly wrinkled surface. Although they are popular in many Italian regions with small variations, adding chocolate is a delectable touch that makes them even more irresistible during Carnival celebrations.
