Ingredients

  • 100 g of good quality white chocolate
  • 50 g of butter
  • 2 whole eggs
  • 2 yolks
  • 60 g of sugar
  • 40 g of 00 flour
  • Butter and flour as needed for the molds
  • Cocoa powder or powdered sugar for decorating (optional)

Preparation

  1. Preheat the oven to 200 °C.
  2. Grease with butter and flour four soufflé or muffin molds, removing excess flour.
  3. Melt the white chocolate in a double boiler with the butter. Stir until you get a smooth mixture and let it cool down.
  4. In a bowl, beat the eggs, yolks, and sugar until you get a frothy and clear mixture.
  5. Gently incorporate the sifted flour, mixing from top to bottom so as not to deflate the mixture.
  6. Add the melted white chocolate and stir until well incorporated.
  7. Fill the prepared molds about 2/3 full.
  8. Bake the muffins for about 12-14 minutes. The cooking time varies depending on the oven and thickness of the molds. The secret is to get a muffin with well-cooked edges and a still soft and molten heart.
  9. Remove the muffins from the oven, let them rest for a minute and then carefully turn them onto a plate.
  10. If desired, dust with bitter cocoa or powdered sugar to decorate.

Curiosity
