Chocolate Cake with Sour Cream

Ingredients
- 200 g of all-purpose flour
- 200 g of granulated sugar
- 100 g of unsweetened cocoa powder
- 1 packet of baking powder
- 1 pinch of salt
- 3 large eggs
- 100 ml of seed or light olive oil
- 200 g of sour cream
- 100 g of dark chocolate
For the cream:
- 250 g of sour cream
- 50 g of powdered sugar
- 1 teaspoon of vanilla extract
Preparation
- Preheat the oven to 180 °C and butter and flour a 20 cm diameter cake pan.
- In a large bowl, sift together the flour, cocoa, baking powder, and salt.
- In another bowl, beat the eggs with the sugar until the mixture is light and fluffy.
- Add the oil and sour cream to the eggs and mix well.
- Fold the dry ingredients into the egg mixture, gently mixing until the batter is smooth.
- Melt the dark chocolate in a double boiler or microwave and let it cool slightly. Then, incorporate it into the batter.
- Pour the batter into the prepared pan and bake for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
For the cream:
- In a bowl, mix the sour cream with the powdered sugar and vanilla extract until smooth.
- Spread the cream over the cooled cake and decorate as desired.
