Chocolate Cake with Apricots and Amaretti

Ingredients
- 200 g of dark chocolate
- 100 g of butter
- 3 eggs
- 150 g of sugar
- 100 g of flour
- 1 packet of baking powder
- 100 g of soft amaretti
- 150 g of dried apricots (or fresh if in season)
- A pinch of salt
- Powdered sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C.
- If you are using dried apricots, soak them in hot water for 15-20 minutes to soften them, then drain and cut them into small pieces. If using fresh apricots, wash them, dry them, remove the pit and cut them into small pieces.
- Melt the chocolate in a double boiler together with the butter.
- In a bowl, beat the eggs with the sugar until you have a frothy and light mixture.
- Gently incorporate the melted chocolate and butter into the egg mixture.
- Roughly crumble the amaretti and add them to the batter.
- Also add the apricots and mix well.
- Add the sifted flour, baking powder, and a pinch of salt, and mix until smooth.
- Pour the batter into a buttered and floured cake pan (or lined with parchment paper) and bake in the oven for about 35-40 minutes or until a skewer inserted into the center of the cake comes out clean.
- Let the cake cool completely before dusting it with powdered sugar, if you wish.
