Chocolate Cake with Apricots and Amaretti

Ingredients

  • 200 g of dark chocolate
  • 100 g of butter
  • 3 eggs
  • 150 g of sugar
  • 100 g of flour
  • 1 packet of baking powder
  • 100 g of soft amaretti
  • 150 g of dried apricots (or fresh if in season)
  • A pinch of salt
  • Powdered sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C.
  2. If you are using dried apricots, soak them in hot water for 15-20 minutes to soften them, then drain and cut them into small pieces. If using fresh apricots, wash them, dry them, remove the pit and cut them into small pieces.
  3. Melt the chocolate in a double boiler together with the butter.
  4. In a bowl, beat the eggs with the sugar until you have a frothy and light mixture.
  5. Gently incorporate the melted chocolate and butter into the egg mixture.
  6. Roughly crumble the amaretti and add them to the batter.
  7. Also add the apricots and mix well.
  8. Add the sifted flour, baking powder, and a pinch of salt, and mix until smooth.
  9. Pour the batter into a buttered and floured cake pan (or lined with parchment paper) and bake in the oven for about 35-40 minutes or until a skewer inserted into the center of the cake comes out clean.
