Chocolate Beer and Strawberry Dessert
17/11/2023I propose a dessert variant that uniquely combines chocolate, beer, and strawberries. It will be a sort of chocolate mousse with a beer reduction and fresh strawberries.
Ingredients
- 200g of good quality dark chocolate
- 3 eggs
- 50g of sugar
- 250ml of fresh cream
- 1 pinch of salt
- 100ml of dark beer (such as stout or porter, which have coffee or chocolate notes)
- 200g of fresh strawberries
- 1 tablespoon of brown sugar
- A bit of grated orange zest (optional)
Preparation

Start by breaking the dark chocolate into pieces and melting it in a double boiler. Make sure to stir often and to not let water get into the chocolate.

Separate the yolks from the egg whites. Beat the yolks with the sugar until you get a light and fluffy mixture.

Gently fold the temperate melted chocolate into the mixture of yolks and sugar.

Whip the cream until it forms stiff peaks and fold it into the chocolate mixture, moving the spoon from the bottom to the top to keep it aerated.

In a separate bowl, whip the egg whites with a pinch of salt and gently fold them into the mousse.

Pour the beer into a saucepan and add brown sugar. Let it reduce over low heat until it becomes a slightly thick syrup.

Wash and chop the strawberries into pieces and marinate them in the cool beer syrup. If you like, you can add a bit of grated orange zest.

Assemble the mousse in glasses or serving bowls, alternating with the marinated strawberries.

Leave the dessert in the fridge for at least an hour before serving.
While the dark beer perfectly complements the intense notes of the chocolate, the strawberries add freshness and lightness that elevate the dessert. You can decorate with some whole strawberries or a bit of grated chocolate before serving.
