Chocolate and Raspberry Little Hearts

Ingredients

  • 200 g of good quality dark chocolate
  • 100 g of unsalted butter
  • 100 g of powdered sugar
  • 2 large eggs
  • 1 egg yolk
  • 50 g of 00 flour
  • 1 pinch of salt
  • Fresh raspberries (about 100 g)
  • Powdered sugar for decoration

Preparation

  1. Preheat the oven to 180 °C.
  2. Line a muffin tin with parchment paper, or use heart-shaped molds if available.
  3. Melt the dark chocolate and butter in a double boiler or in the microwave, being careful not to burn it. Let the mixture cool down.
  4. In a bowl, beat the eggs, egg yolk, and powdered sugar until you get a light and fluffy mixture.
  5. Gently fold in the cooled melted chocolate into the egg mixture, stirring with a spatula with bottom-up movements.
  6. Add the sifted flour and a pinch of salt, mixing until well incorporated.
  7. Fill the molds halfway and place some raspberries in the center.
  8. Pour the remaining batter into the molds, covering the raspberries.
  9. Bake in the preheated oven for about 12-15 minutes. The chocolate hearts should be cooked on the outside but still soft in the center.
  10. Remove from the oven and let cool for a few minutes before unmolding.
  11. Dust with powdered sugar before serving.
